can i use 2 of these component video rca cables in place of a standard analog rca audio cables in my car audio system?

Technically you could use the video cables for audio purposes in your car audio system--however, given that these cables are designed specifically for video signal transfer, you would likely get better quality and performance from an RCA audio cable in this situation.
